Holiday Finger Food: Ways to Transform Christmas Leftovers into New Year’s Eve Appetizers

Party snacks needn't be elaborate, so New Year's offers a great chance to clear the decks. The main guideline is to keep things to just one bite—no one wants to handle a fork. Guests are looking for a big hug of comfort food with a decadent twist.
Should you possess a bit of cured fish left, layer it on blinis and top it with lumpfish caviar. Mini fishcakes are also an ideal choice: If you have remaining fish or flaked salmon, mix it through creamy potatoes, combine with dill, citrus, and fried leeks, then coat in Japanese breadcrumbs and deep-fry.
You could also get creative with croquetas. Make the bechamel up to days ahead, then use remaining pork, chicken, or mushrooms for the interior. Blitz old bread into crumbs to coat them, then cook until crisp. Savoury pastry fillings are another natural home for those crumbs, or use them as a coating for bite-sized chicken. Seasoning-wise, just add a bit of citrus zest and aromatic herbs, and they'll taste so much more. As an aside, croissants make excellent coatings, too.
One beloved treat at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Place some holiday meats in an airtight container and freeze. While you're at it, reserve some berry relish and honey ham glaze in the refrigerator. When needed, thaw the meat, then pop it in a hot oven with the saved glaze for a short time. Let it cool and cut into thin pieces, then arrange on top of some sourdough and assemble sandwiches with lots of tangy sauce. Cut into small squares for a winner.
Remaining poultry, meanwhile, could be turned into a zingy salad. There’s always a bit of turkey leg left over, and it's ideal for something full of flavour. Pull the meat, then fry it slowly in a pan, and mix with leftover cranberry sauce thinned with lime juice, a dash of soy sauce and a little spicy oil. Garnish with chopped herbs and some green onions, and serve in small lettuce cups.
Transforming Leftover Vegetables
Vegetables, meanwhile, can be scrubbed up and fit for a party with a big batch of fried potato cake. Mix all your remaining vegetables with fresh herbs, then season and incorporate a binding agent. Cut out portions to roughly the size of blinis, then keep in the freezer. Reheat in a hot oven for a short time and top with your choice of topping—perhaps sliced beef and sharp horseradish. A word to the wise, though: set some aside for brunch the next day.
